Dance Recital Treats

My daughter requested Chocolate Chip Scones for her Dance Recital, and I found a gluten-free recipe in Enjoy Life’s cookbook Cupcakes and Sweet Treats for Everyone! They came out really tasty, and no one would know they were gluten-free as well.

The next day, I had to make a couple of things for my daughter’s lunches and breakfast for the week, so I combined a couple of the muffin variations in The Vegetarian Family Cookbook to come up with Cocoa-Strawberry Muffins. And then I made the Peanut Butter Blondie Recipe from Vegan Cookies Invade Your Cookie Jar. The recipe calls for the Blondies to be topped with peanuts, but I thought mini-chocolate chips sounded better, especially since I used crunchy peanut butter in the batter. I tweaked both recipes to be gluten-free, but you’d never know!
