Spring Menu

My daughter picked the Spring Menu from Vegan Lunchbox for this week. The main elements were Sunflower Sandwiches–I just used a One Bun instead of the English muffin–and Honeybee No-Bake cookies. The cookies are a blend of oat bran, wheat germ (because I didn’t have enough oat bran), cocoa, almond/cashew butter, and coconut. The almond slices on the top are the bee’s wings–not bunny ears like my daughter first thought!


For the sandwiches, I put the two slices of One Bun together with a layer of soy cream cheese in between to make it thicker. Then a thicker layer of cream cheese topped with a dried pineapple ring, currants, and sunflower seeds.

After all that, I needed to make something for myself, so I made the Blueberry Bounty Buns from Vive le Vegan!, substituting King Arthur’s Gluten-Free Whole Grain Flour for the whole wheat pastry flour called for. They were tasty!
