Confetti Quinoa

My journey through Urban Vegan continues, and I made the Confetti Quinoa recipe the other day. I added a little spinach since I didn’t have any peas, and it was quite tasty!

I am also dutifully going through the cocktails chapter. Wasn’t too impressed with the Gimlet, but the Opinionated Cosmo wasn’t too bad.
