Halloween’s Not Quite Over Yet!

There is a Halloween menu in Vegan Lunch Box–unfortunately, my daughter found it the week after! No matter–since it is my favorite holiday, I was happy to extend it a little!

So this week called for homemade Chocolate Graham Crackers, which are used to make sandwiches filled with a blend of peanut and apple butter. We made owl and ghost-shaped crackers. I’m not big into things that require rolling, which is why I rarely make pie, but I think they came out pretty good. They are accompanied by carrot “Goblin Fingers” and apple juice.

They look better in person! I did have to tweak the recipe a bit, using whole wheat pastry flour instead of regular whole wheat, but I haven’t heard any complaints!
