Lunchbox Adventures Presentation

My daughter is having so much fun with her different lunches that she is planning to do a presentation on them for her school in the spring. She recently did a talk for her class on being vegan, and her teacher made a special vegan lunch for her class on that day. I supplied vegan “chicken” nuggets, and they were a huge hit!

Since my last post, there has been vegan “fish” sticks with tater tots–not sure how she ate those cold, but she said she liked them!–deli roll-ups, which consisted of a slice of veggie bologna spread with soy cream cheese and wrapped up like a cigar, and pumpkin chocolate chip muffins, and this week is tortilla roll-ups–whole wheat tortilla spread with refried beans and rice and then wrapped. Next week is still to be determined.
